China, Flatware and Glassware FAQ's
What pieces make up an average formal dinner place setting?
China: Dinner plate, Salad plate, Bread and Butter plate, Coffee Cup and Saucer, and a Dessert Plate (usually brought in later in the meal)

Flatware: Dinner fork, Salad fork, Dinner knife, Butter knife, Teaspoon and either an additional Salad fork or Teaspoon for the Dessert.

Glassware: Water goblet and Wine glass.
What dishes do I need for my guests at a buffet?
Less is best, because your guests are balancing these dishes as they go through the buffet line.  Generally, a Luncheon plate (9" diameter) is used to place the food on (including salad) because buffet menus are usually somewhat lighter  than a full course meal.
Can I use plastic stemware with china plates?
We don't recommend it.  Mixing disposable plastics with china dishes for a sit down dinner or buffet takes away from the "look" you are trying to achieve.   However, it is possible to mix clear glass plates with clear plastic stemware for an outdoor, casual event, especially around a pool.
Do I need to give a fork, knife and spoon to every guest if it's an informal buffet?
No.   Take a look at your menu; are there any food items that will require a knife for cutting? If not, don't put them out, other than a few in the condiment area.  Teaspoon only needed for coffee drinkers?  Consider creating a "Coffee Service Area" where coffee, condiments and a half dozen teaspoons are set out for shared use.
I'm going to be serving Iced Tea, Beer and Soda at the bar...is there one glass I could use for all? Also, is there an all-purpose Wine glass, suitable for red or white wine?
The Water goblet is perfect for Iced Tea, Beer or Soda, besides water. A Tulip- shaped Wine glass of about 10 ounces can be used for just about any wine, even champagne. We also carry an 8.5 ounce multi-purpose wine glass that works well for all wine selections.
Is there one Bar glass that can be used for a variety of mixed drinks?
There are two glasses that can be used for just about any drink: the  "Old Fashioned" and the "Highball" glasses.  Many caterers use the Old Fashioned,  as it has an 8 ounce capacity and a nice look to it.
I like buffet service, but how can I get my guests to move faster through the line?
Consider creating "stations" throughout your room;  start them at a "salad station", where only salad items and cold finger foods are placed, then they must go to the "entree station" where the entrees and side dishes are.  Desserts and beverages have their own "stations" as well.  This system will ease any "traffic" problems perfectly, as well as create an interesting look to your event.

General Questions
How soon should I place my order?
The sooner the better. Some of our more popular items are tents, tables, linens, chairs, and wedding items, so reserve these early. Tents should be reserved at least 2-3 months in advance, if not sooner.
Can reservations be placed over the phone?
Yes, we can take your order over the phone. But in order for your order to become a reservation, we must collect a reservation deposit (normally 20% of the order). This can be accomplished by charging it to a credit card over the phone, in person at one of our locations, or by mail. The rental and deposit can be paid by check, cash, American Express, Visa, MasterCard and Discover. Only companies with an established credit account may be invoiced on a rental contract.
How long can equipment be kept for?
All rates are for a 24 hour period, however, equipment may be delivered a day before the rental day and picked up a day after. Special rates are available for long term rentals.
Do you deliver or do I pick the equipment up?
We can deliver the items, but it is an additional charge, based on destination. Set-up is included in tent and staging rentals. Rental equipment may also be picked up at one of our locations for your convenience.
Do you set up the tables and chairs?
No, the rental rates do not include set up or take down. Tables and chairs should be knocked down and stacked ready for pick up. Set up and take down is available if arranged prior to delivery and for an additional labor fee.
Do I have to wash the equipment before pick-up?
All dinnerware, glassware and flatware must be rinsed free of food and repackaged in their delivery containers. Linens should be free of debris and dried to prevent staining and mildew. Food service equipment must also be free of food and reasonably clean. Additional charges will be applied if items do not meet the above conditions.
What if something gets broken or is missing?
We charge for breakage and missing items at retail replacement cost. So please make sure that equipment is secure and protected.

How much to buy for a party:
CHAMPAGNE: 1 case (12 fifths) serves 50 people (82 drinks).
PUNCH:           24 serving per gallon of punch.
COFFEE:         1 pound of coffee makes 60 cups.
                       Decaffeinated coffee is generally more popular than regular coffee at evening events.
LIQUOR:          Plan on approximately 2 drinks per hour, per person.
                       There are 28 drinks per quart of liquor.

TIP: Champagne is a popular beverage choice for a fountain, but many hosts find that not all guests like the taste. Consider making a Champagne Punch instead with champagne, ginger ale and Triple Sec, which makes for a slightly sweeter drink.

If you plan to make a fruit punch in the fountain, freeze some of the punch in a small mold the night before. When you are ready to serve the punch, remove the punch from the mold and place if in the fountain; it will help keep the rest of the punch cold without diluting it as ice cubes would.

How large a pig can I cook on the 2'x5' Rotisserie?
A 100 pound pig is the largest it can hold, which is plenty of meat! Figure between three quarters and one pound of dressed pig per guest. Allow 8 to 12 hours for cooking. The meat is ready when a meat thermometer, set at its deepest point, but not near metal or bone, has reached a temperature of 180 degrees. If you are cooking in a breezy area, you may want to create an aluminum foil hood over the grill, similar to a "covered wagon top", to block the wind which could lengthen the cooking time.

When should invitations and announcements be ordered?
Approximately six months prior to the wedding.
When should announcements be mailed?
Approximately two months prior to the wedding.
May guests be invited to the reception and not the wedding?
Yes, if the ceremony is to be attended by only relatives and close friends.
What does the bride give the bridesmaids?
A small, lasting gift - such as a piece of jewelry.
What does the groom present to his ushers?
Gloves, ties and boutonnieres.
What does the groom present to his bride as a gift?
A personal gift such as jewelry.
How many ushers are needed?
One usher per 50 guests.
Where can receptions be held?
The bride's home, the home of a friend, hotel or club.
Where does the bride sit at the Bride's Table?
Always on the groom's right.
Do parents have to sit at the Brides Table?
No, they may have their own table.
Who gives the first toast to the bride?
The best man.
Which side of the church is reserved for the bride's family and friends?
The left is for the bride, the right is for the groom.
Can a home wedding be as formal as a church wedding?
Yes, but there are usually not as many attendants.
Who cuts the first piece of cake?
The bride with the groom's right hand over hers. They then break the slice and eat it together.
How does the reception dance start?
The bride and groom should be honored with the first dance.
